- 1 to 2 tablespoons Dijon mustard

- Juice of 1/2 lime
- 1/2 cup olive oil
How To Make Heirloom Tomato Salad
- Prepare the Platter: Shingle the sliced heirloom tomatoes along one side of a large, round platter.
- Mix Cherry Tomatoes: In a bowl, toss the heirloom cherry tomatoes with chopped parsley, 1 tablespoon of olive oil, a pinch of salt, and a pinch of black pepper. Place this mixture next to the sliced tomatoes on the platter.
- Add Arugula: Toss the arugula with 1 tablespoon of the Cucumber Herb Dressing. Place the arugula in the center of the platter.
- Add Burrata and Garnishes: Drizzle a bit of the dressing onto the open space on the platter, then place the burrata on top. Sprinkle the burrata with salt, pepper, and drizzle with the remaining 1/2 tablespoon of olive oil. Garnish with thinly sliced shallots, chopped chives, and microgreens.
Recipe Tips
- Choose Ripe Tomatoes: For the best flavor, pick ripe, colorful heirloom tomatoes. They add sweetness and vibrant color that make this salad special.
- Serve Burrata at Room Temperature: Allow the burrata to sit out for a few minutes before serving. This makes it creamier and easier to slice.
- Use Fresh Herbs: Fresh parsley, cilantro, and chives bring the dressing to life. Avoid dried herbs, as they won’t have the same flavor.
- Don’t Skip the Cucumber Juice: Grating and straining the cucumbers gives the dressing a light, refreshing flavor. It’s worth the extra step!
- Add Dressing Just Before Serving: Toss the salad with dressing right before serving to keep the greens fresh and crisp.
How To Store Leftovers
Place leftover Heirloom Tomato Salad in an airtight container and refrigerate for up to 2 days to keep the flavors fresh.
