Ingredients Needed:

For the Dough and Filling:

  • 1-quart whole milk
  • 1 cup vegetable oil
  • 1 cup sugar
  • 2 (0.25 oz) packets of active dry yeast
  • 8 cups (plus 1 cup extra, reserved) all-purpose flour
  • 1 tsp (heaping) baking powder
  • 1 tsp (scant) baking soda
  • 1 tbsp (heaping) salt
  • Plenty of melted butter
  • 2 cups sugar
  • Generous sprinkling of cinnamon

For the Maple Frosting:

  • 1 (2 lb) bag powdered sugar
  • 2 tsp maple flavoring
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1/4 cup brewed coffee
  • 1/8 tsp salt

How To Make This Cinnamon Rolls:

  1. Make the Dough: Heat the milk, vegetable oil, and sugar in a medium saucepan over medium heat, just below a boil. Remove from heat and let cool until warm. Sprinkle yeast over the warm milk mixture and let it sit for 1 minute.
  2. Add Flour and Let Rise: Stir in 8 cups of flour until just combined. Cover with a kitchen towel and let the dough rise in a warm place for 1 hour. After the hour, add baking powder, baking soda, salt, and the remaining 1 cup of flour. Mix well. You can use the dough right away or refrigerate it for up to 3 days.
  3. Roll Out the Dough: Take half the dough and roll it into a thin rectangle, about 30 x 10 inches, on a floured surface.
  4. Add the Filling: Pour 3/4 to 1 cup of melted butter over the dough and spread it evenly. Sprinkle generously with cinnamon and 1 cup of sugar. Roll the dough tightly into a log from one end to the other, then pinch the seam to seal it.
  5. Slice the Rolls: Cut the log into 1/2-inch thick slices. Each log should yield about 20 to 25 rolls.
  6. Prep the Pans: Pour a couple of teaspoons of melted butter into the bottom of foil or cake pans. Place the rolls in the pans, leaving some space between each.
  7. Rise and Bake: Cover the pans with a towel and let the rolls rise for 20 minutes. Preheat your oven to 375°F. Bake the rolls for 15 to 18 minutes until golden brown.
  8. Make the Maple Frosting: In a large bowl, whisk together powdered sugar, milk, melted butter, coffee, and salt. Add maple flavoring and adjust ingredients for the desired consistency.
  9. Frost the Rolls: Drizzle the maple icing over the hot cinnamon rolls as soon as they come out of the oven. Let the icing soak in and enjoy!

Recipe Tips

  • Let the dough rise fully: Give the dough enough time to rise properly, or your rolls won’t be light and fluffy.
  • Roll the dough thin: Rolling the dough very thin helps to achieve that perfect swirl with a good filling-to-dough ratio.
  • Spread the butter generously: Don’t skimp on butter for the filling! The butter adds richness and keeps the rolls moist.
  • Use chilled dough for easier handling: Chilling the dough for an hour makes it easier to roll and handle without sticking.
  • Don’t overbake: Keep an eye on the rolls as they bake to prevent them from becoming too brown or dry.

How To Store Leftovers

Store the baked rolls in an airtight container in the fridge for up to 4 days.

Freeze unfrosted rolls in an airtight container for up to 2 months. To serve, thaw at room temperature and warm in the oven before adding the frosting.
