Ingredients Needed:

For The Crust:

  • 20 Frozen Unbaked Dinner Rolls, Such As Rhodes
  • All-purpose Flour, For Rolling
  • 2 Eggs, Mixed With 2 Tablespoons Water (For Egg Wash)

For The Filling:

  • 1 Tablespoon Vegetable Oil
  • 2 Poblano Peppers, Seeded And Chopped
  • 1 Onion, Chopped
  • ½ Teaspoon Red Pepper Flakes
  • 4 Cloves Garlic, Chopped
  • 1½ Pounds Ground Beef
  • 1 Tablespoon Chili Powder
  • 1 Teaspoon Ground Cumin
  • ¾ Teaspoon Kosher Salt
  • Freshly Ground Black Pepper, To Taste
  • 3 Tablespoons Tomato Paste
  • ¼ Cup Water
  • 1 Cup Grated Pepper Jack Cheese
  • ½ Cup Chopped Fresh Parsley

How To Make Beef Pies:

  1. Thaw the Rolls: Place the frozen rolls on a baking sheet. Cover with a tea towel and let them thaw and rise for 2 to 3 hours.
  2. Cook the Vegetables: In a large skillet, heat the oil over medium heat. Add the poblano peppers and onion, cooking until softened, about 5 minutes. Add the red pepper flakes and garlic, cooking for another minute. Transfer the mixture to a bowl and set aside.
  3. Cook the Beef: Using the same skillet, add the ground beef and cook over medium-high heat. Break up the beef while it cooks. Add chili powder, cumin, and ¾ teaspoon salt. Cook for 5 to 7 minutes until the beef is no longer pink. Stir in the tomato paste and ¼ cup water, then add the cooked vegetables. Set aside to cool.
  4. Add Cheese and Parsley: Once the beef mixture has cooled, stir in the grated cheese and parsley. Season with additional salt and pepper, if needed.
  5. Preheat Oven: Preheat the oven to 400°F (200°C).
  6. Form the Pies: On a lightly floured surface, roll each thawed roll into a 4-inch circle, about ¼ inch thick. Place 1½ tablespoons of the beef mixture in the center of each circle. Brush the edges with the egg wash, fold the dough over to form half-moon shapes, and crimp the edges with a fork. Place the pies on a parchment-lined baking sheet and brush the tops with the egg wash.
  7. Bake: Bake the pies until golden brown, 10 to 12 minutes.

Recipe Tips

  • Use thawed rolls for best results: Make sure the dinner rolls are fully thawed and risen before rolling them out. This ensures the dough is soft and easy to work with.
  • Cool the filling completely before adding cheese: Let the beef mixture cool before adding the cheese to prevent it from melting too early, which helps keep the filling evenly mixed.
  • Roll the dough evenly: When rolling out the dough, aim for an even 4-inch circle so that all the pies cook evenly in the oven.
  • Seal the edges tightly: Use a fork to crimp the edges well to avoid the filling leaking out during baking.
  • Brush with egg wash for a golden finish: Don’t skip the egg wash—it helps the pies turn a beautiful golden brown and adds a slight shine to the crust.

How To Store & Reheat Leftovers

Storing in the Fridge: Place any leftover beef pies in an airtight container and store them in the fridge for up to 3 days.

Freezing: To freeze, wrap each pie individually in plastic wrap or aluminum foil, then place them in a freezer-safe bag or container. They can be frozen for up to 3 months.

Reheating: To reheat, preheat your oven to 350°F (175°C). Place the pies on a baking sheet and bake for 10-15 minutes until heated through. For frozen pies, let them thaw in the fridge overnight before reheating.
