Ingredients Needed:

  • 12 oz. spaghetti or angel hair pasta
  • 3 tablespoons toasted sesame oil
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons sugar
  • 2 tablespoons rice vinegar
  • 4 garlic cloves, minced
  • 1 1/4 lb. sirloin steak, thinly sliced against the grain
  • 1 teaspoon cornstarch
  • 4 tablespoons vegetable oil
  • 1 head broccoli, cut into small florets (peel and slice the stalks)
  • 1 (8 oz.) can sliced water chestnuts
  • 1 red Fresno chile pepper, thinly sliced
  • 3 scallions, thinly sliced
  • Kosher salt, to taste

How To Make Beef And Broccoli Stir Fry:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook as per package instructions. Drain and toss the pasta with 1 tablespoon of sesame oil.
  2. Prepare the sauce: In a small bowl, mix soy sauce, sugar, rice vinegar, garlic, and 2 tablespoons of sesame oil. Set aside 3 tablespoons of this mixture and toss it with the sliced steak. Stir the cornstarch into the remaining sauce.
  3. Cook the broccoli: Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the broccoli and cook until slightly browned, about 1½ minutes, then toss and continue cooking until bright green, 3 to 5 minutes. Lightly season with salt and remove from the pan.
  4. Brown the beef: Add 1 tablespoon of vegetable oil to the skillet. Add half the steak and cook without stirring for 30 seconds to brown. Turn the meat and cook for another 30 seconds. Remove from the skillet and repeat with the remaining steak.
  5. Cook the chestnuts and chile: Lower the heat to medium. Add water chestnuts and half of the sliced chile pepper to the skillet and toss for about 30 seconds to heat through.
  6. Finish the stir fry: Stir the soy sauce and cornstarch mixture, then pour it into the skillet. Bring it to a simmer. Add the browned beef and cooked broccoli back to the skillet and toss to coat everything in the sauce. Cook for 1 minute until heated through.
  7. Serve: Serve the stir fry over the cooked pasta and garnish with sliced scallions and the remaining chile pepper. Enjoy your delicious Beef and Broccoli Stir Fry!

Recipe Tips

  • Slice the steak thinly: Ensure the sirloin steak is sliced thinly against the grain for tender, evenly cooked beef.
  • Don’t overcook the broccoli: Cook the broccoli until bright green and slightly tender to maintain its crunch and vibrant flavor.
  • Cook the meat in batches: Avoid overcrowding the pan when browning the steak. Cook in batches for an even sear.
  • Prepare the sauce ahead: Mix the soy sauce and cornstarch in advance to make the final steps smoother and quicker.
  • Toss the pasta with sesame oil: Adding sesame oil to the pasta after draining prevents it from sticking together and enhances the flavor.

How To Store & Reheat Leftovers

Storing Leftovers: Place any leftover stir fry in an airtight container and store it in the fridge for up to 3 days. Let the dish cool completely before sealing it.

Reheating Leftovers: Reheat the stir fry in a skillet over medium heat for 3–4 minutes, adding a splash of water if needed.
