Ingredients Needed
- 3 Tbsp salted butter
- 2 apples, peeled and diced
- 1/2 cup packed light brown sugar
- Juice of 1/2 lemon
- 2 Tbsp apple juice or cider (or water)
- 1 Tbsp cornstarch
- 1 (14-oz.) package refrigerated pie dough (2 crusts)
- 1/2 cup powdered sugar
- 2 to 3 teaspoons heavy cream
- 1/8 teaspoon ground cardamom (optional)
How To Make Apple Pie Cookies
- Prepare the Apple Filling: Melt the butter in a medium saucepan over medium-high heat. Add the diced apples and cook for 3-4 minutes until they soften. Stir in the brown sugar and lemon juice, bringing it to a simmer. Cook for an additional 3-4 minutes until the apples are tender and the liquid begins to reduce. In a small bowl, whisk together the apple juice (or water) and cornstarch, then add it to the pan. Cook, stirring until the mixture thickens, about 1 more minute. Remove from the heat and let cool.
- Prepare the Dough: Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper. Roll out one piece of the pie dough into a 12-inch (30cm) round. Using a 3-inch (7.5cm) cutter, cut out 12 small rounds and arrange them on the baking sheet. Re-roll the scraps and cut out 2 more rounds. Roll the second piece of dough into a 12-inch (30cm) round and slice it into 1/2-inch (1.25cm) wide strips. Cut these strips into 3 1/2 to 4-inch (9-10cm) pieces. You should have about 56 pieces.
- Assemble the Cookies: Place a tablespoon of the apple mixture in the centre of each dough round. Lay 2 parallel strips of dough over the filling, followed by 2 perpendicular strips to create a lattice pattern. Alternatively, you can weave the strips into a lattice. Trim the edges of the dough strips and press them around the edges with a fork to seal.
- Bake the Cookies: Bake the cookies in the preheated oven for 18-20 minutes, or until golden brown. Remove them from the oven and let them cool on a wire rack.
- Make the Glaze: In a small bowl, whisk together powdered sugar, heavy cream, and cardamom (if using). Drizzle the glaze over the cooled cookies.
Recipe Tips
- Don’t Overcook the Apples: Cook the apples just until they soften, so they stay tender inside the cookie. Overcooking can make them mushy.
- Seal the Dough Well: Press the dough edges firmly with a fork to prevent the filling from leaking out during baking.
- Use Cold Pie Dough: Cold dough helps maintain its shape when baking. Let it chill in the fridge before using.
- Adjust the Sweetness: If you prefer a sweeter filling, add more sugar, but be careful not to make it too sweet.
- Add Extra Spices: For more flavour, add a pinch of cinnamon or nutmeg to the apple mixture to enhance the taste.
How To Store Leftovers
- Refrigerate: Place leftovers apple pie cookies in an airtight container in the fridge. They’ll stay fresh for up to 3 days.
- Freeze: Freeze leftovers apple pie cookies on a baking sheet for up to 1 month. Thaw at room temperature for about 1 hour before serving.
