How To Make Crock Pot Lasagna

  1. Prepare the Meat Mixture: Heat olive oil in a large skillet over medium-high heat. Add diced onion and sauté for 5 minutes. Add ground beef, Italian sausage, and garlic, and cook until browned, about 7-9 minutes. Stir in diced tomatoes (with juice), tomato paste, basil, parsley, oregano, salt, and black pepper. Mix well, then set aside.
  2. Prepare the Cheese Mixture: In a medium bowl, combine ricotta cheese, Parmesan, Romano, basil, parsley, salt, pepper, and beaten eggs. Stir until the mixture is smooth and well-combined.
  3. Assemble the Lasagna: Spray the slow cooker insert with nonstick cooking spray. Spoon one-quarter of the meat mixture into the bottom. Layer with 5 uncooked lasagna noodles, broken to fit. Top with one-third of the cheese mixture and sprinkle with 1/2 cup of mozzarella cheese. Repeat the layering twice, starting with the meat mixture and ending with mozzarella cheese.
  4. Final Layer: For the fourth layer, top with the remaining meat mixture and sprinkle with the remaining 1/2 cup of mozzarella cheese.
  5. Cook the Lasagna: Cover the slow cooker and cook on low for 4 hours. Once cooking is complete, turn off the heat and let the lasagna sit for 30 minutes before serving.
  6. Serve: Garnish with freshly chopped parsley before serving for a burst of color and flavor.

Recipe Tips

  • Use uncooked noodles: Do not pre-cook the lasagna noodles. The slow cooker will cook them perfectly, and it keeps the lasagna from getting soggy.
  • Layer ingredients carefully: Make sure to spread the meat mixture and cheese mixture evenly in each layer. This helps all the flavors blend together nicely.
  • Let it sit before serving: After cooking, let the lasagna sit for about 30 minutes. This helps it firm up, making it easier to slice and serve.
  • Don’t overfill the slow cooker: If your slow cooker is smaller than 6 quarts, be careful not to overload it. You may need to adjust the number of layers to prevent overflow.
  • Add extra mozzarella:  If you love cheesy lasagna, feel free to add more mozzarella between the layers for extra melt and flavor.

How To Store & Reheat Leftovers

  • Refrigerate: Cover leftovers crock pot lasagna and store it in the fridge for 3-4 days.
  • Freeze: After cooling, wrap leftovers crock pot lasagna tightly and freeze it for up to 3 months. Thaw overnight in the fridge before reheating.
  • Reheating: Reheat leftovers crock pot lasagna in the oven at 350°F for 20-25 minutes or microwave individual servings for 2-3 minutes.
