This easy and delicious Pioneer Woman Tortellini Pasta Salad is a quick meal packed with fresh, colourful ingredients like juicy tomatoes, creamy mozzarella, and tangy sundried tomatoes. Ingredients Needed

  • 600g refrigerated or frozen cheese tortellini

For the Dressing:

  • 160ml olive oil, divided
  • 80ml white wine vinegar
  • 4 tbsp sundried tomatoes in oil, finely chopped
  • 25g finely grated parmesan cheese
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

For the Salad:

  • 200g cherry tomatoes, halved
  • 225g fresh mozzarella, cut into 1.5cm pieces
  • 100g sliced salami
  • 100g sliced black olives
  • 1 small courgette, thinly sliced
  • 1 small yellow or green bell pepper, thinly sliced
  • 75g sliced pepperoncini peppers
  • 1/4 medium red onion, thinly sliced
  • 15g fresh basil, chopped

How To Make Tortellini Pasta Salad​

  1. Cook the tortellini: Cook the tortellini as per package instructions, drain, rinse with cold water, and toss with 2 tablespoons (30ml) olive oil to prevent sticking.
  2. Prepare the dressing: In a large bowl, whisk together 130ml olive oil, white wine vinegar, sundried tomatoes, parmesan, honey, salt, and black pepper until well combined.
  3. Combine the salad: Add the cooked tortellini, cherry tomatoes, mozzarella, salami, black olives, courgette, bell pepper, pepperoncini, and red onion to the bowl with the dressing. Toss to combine everything thoroughly.
  4. Chill the salad: Cover the salad and refrigerate for at least 1 hour or up to 3 days to let the flavours meld beautifully.
  5. Add basil and serve: Just before serving, stir in the fresh basil and garnish with extra parmesan if desired
