  • 1 cup thinly sliced lettuce (such as romaine)
  • 1/2 cup diced tomato
  • 1/4 cup diced red onion
  • 1/4 cup chopped dill pickle
  • Kettle-cooked potato chips or pita chips (for serving)

For the Sauce:

  • 1/3 cup mayonnaise
  • 1 Tbsp. mustard
  • 1 1/2 Tbsp. ketchup
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. smoked paprika
  • 1 Tbsp. Pickle brine (juice from the jar)

How To Make This Cheeseburger Dip:

  1. Preheat the oven: Set the oven to 375°F.
  2. Cook the beef: In a medium skillet, heat the oil over medium-high heat. Add the ground sirloin, Worcestershire sauce, salt, and pepper. Break the beef into small pieces with a wooden spoon. Cook for about 6 minutes until browned and no longer pink. Remove from heat.
  3. Prepare the dip: Spread the cream cheese in the bottom of a 10-inch cast-iron skillet. Layer half of the shredded cheese, followed by the cooked ground beef, and then top with the remaining shredded cheese. Bake in the oven for 18 to 20 minutes, until the edges are bubbly. Let it cool for 10 minutes.
  4. Make the special sauce: In a small bowl, mix together the mayonnaise, mustard, ketchup, garlic powder, onion powder, smoked paprika, and pickle brine.
  5. Top and serve: Add lettuce, tomato, red onion, and chopped dill pickle on top of the dip. Drizzle with the special sauce. Serve with kettle-cooked potato chips or pita chips.

Recipe Tips

  • Soften the cream cheese: Let the cream cheese soften before spreading it. This makes the dip smooth and creamy.
  • Cook the beef well: Make sure to cook the beef fully until it’s brown, and break it into small pieces for better texture.
  • Layer the cheese: Put cheese in the middle and on top for a gooey, cheesy bite every time.
  • Let the dip rest: Let the dip sit for about 10 minutes after baking, so it cools down a little and thickens up.
  • Add the sauce last: Drizzle the sauce right before serving so the fresh toppings stay crisp.

How To Store Leftovers

Storing in the fridge: Place the leftover dip in an airtight container and store it in the fridge for up to 3 days.

Freezing: Store the dip without toppings in an airtight container in the freezer for up to 2 months.

Reheating: Reheat in the oven at 350°F until warmed through, or microwave individual portions until hot.
